The poutargue (originating name of Martigues) or Boutargue, is the product made from the bag of dried mullet eggs (or muge).
Also called Mediterranean Caviar, it has a very particular assertive taste with a firm consistency. For its bottarga, SAFA favors Premium quality whose mullet eggs come from Brazil. This excellent quality die produces an orange-coloured, elongated bottarga.
For an incomparable taste, therefore with a supple and tender product, it is consumed in the weeks following its transformation.
