Riccia, meaning "curly" in Italian, is a flat pasta shape similar to a lasagna ribbon, but thinner and with curly edges. The frilly ribbons have great texture and look great on the plate. We especially like how they take regular old pasta Bolognese from fine to festive.
Serve with hearty meat or game ragu or tuna sauce.
