A single-varietal early harvest extra virgin olive oil pressed from 100% Koroneiki olives grown in Messenia, Greece. Cold extracted within hours of harvest, it's exquisitely balanced between bitterness and pungency, with aromas of fresh-cut grass, green banana, apple, and wildflowers. About as close to perfect as an early harvest Greek EVOO gets.

Robust in polyphenols and bright on the palate, this is a finishing oil meant for raw applications, drizzled over vegetables, grilled fish, fresh bread, or a simple salad, where its character can shine.
