Since the rules of the Consorzio of Traditional Balsamic Vinegar of Modena allow only a limited number of bottles to bear the Seal of Quality every year, many of the traditional producers bottle a limited amount of balsamico under the Condimento Balsamico category and label. This means that the product has not undergone the scrutiny nor the very limited quota of the Traditional consortium and therefore, reflects the quality standards of the Leonardi family.
Thick and syrupy. Shades of golden brown with impressive brightness and deep mirror effects. Aromas of apple and pear tart with deep caramel undertone along with a well-balanced hint of chestnut honey and cane molasses. In the mouth it is rich, overpowering on the tongue, almost like a good pear brandy. Sweet and sour with a singular flavor of cooked dark caramel, ripe pears, raisins, red currant, black figs and cherries.
Enjoy by the spoonful as a digestif at the end of the meal along with some dry fruit and nuts. Enjoy it at its purest form on top of grilled meats, fish and even afritto misto.
