The dough is leavened with their family's irreplaceable yeast starter which has been carefully nurtured for over 40 years.
The cakes are topped with a rich and crunchy icing made from fine "Prima Bari" almonds from Puglia, pearl sugar, and egg whites before being baked in the shape of a dove, symbolizing peace and the coming spring.
The special Granfrutta Colomba is an explosion of bright colors, tantalizing aromas, and fruity flavors. Succulent pieces of slowly candied fruits are studded throughout this particularly soft, light Colomba: Sicilian lemons and blood oranges, Piedmontese apricots, and juicy, whole black cherries.
