Cencioni, meaning "big rags" or "dish cloths" in Italian, is the most dense pasta produced by Rustichella d'Abruzzo. The pasta is made by rolling the dough with a thin rolling pin creating an oval with a different texture on each side.
Served with a meat ragu or as part of a stew instead of potatoes. Also wonderful in soups or baked.
