Stephen Niarhos: I was born into a Greek family which means most of your life revolves around food and lots of homemade cooking. My grandmother passed down her recipes to both my mom and aunt and my mom passed them down to me. Needless to say, I grew up watching my grandmother and mother make authentic Greek dishes. Some of those dishes included filo dough. Filo is the signature ingredient that makes Greek cooking unique. My favorites were Spanakopita (Spinach/Feta cheese) and the well know, baklava. My grandmother even made Milopita, (Filo with apple filling). Working with filo dough at first can be very intimidating. However, once you know how to cook with it, it becomes very easy and fun. I have various cooking interests besides my beloved Greek dishes. At one time I owned a pastry business which included decorative cakes and well know deserts. My passion for cooking has evolved throughout the years experiencing different cultures and cuisine.
